Kimchi Potato Salad

Tonight I made something unique and phenomenal. I made some Szechuan fried chicken and to go with it, kimchi potato salad. Here’s what I did

Ingredients:

1/2 cup kimchi chopped finely

1/4 onion finely diced

2 hard boiled eggs

5 red potatoes

1 cup mayo

3tbsp rice vinegar

1tbsp sugar

Salt and white pepper

Directions:

Chop and boil the potatoes. While the potatoes are boiling, chop your kimchi, onions, and eggs. Place in a mixing bowl. When your potatoes are fork tender, drain. Add to the kimchi, eggs, and onions, add the mayo, sugar, and vinegar, mash and mix to the texture of your liking. Season with the salt and pepper.
