Okroshka

A cold Russian summer soup that is utter heaven. Perfect on a hot summer day and full of fresh veggies. I was inspired by 2 different recipes and ended up doing my own thing. It came out perfect! So here’s how I made it!

Ingredients:

2 cups plain yogurt

6 cups water

4 small red potatoes peeled and small diced

3 hard boiled eggs

2/3 English cucumber small diced

5 radishes small diced

1 bunch of green onions thin sliced (green part only)

2 medium thick pieces of deli ham cut into bite sized chunks

2tbsp dill

Salt and pepper to taste.

Directions:

First boil the eggs. My recipe is place eggs in cold water, bring to a boil, turn off heat, cover and let sit 11mins. Remove from water and place in an ice bath.

Then, boil the potatoes til fork tender. Drain and rinse and set aside.

Once those are cool, in a large pot, mix the yogurt and water til well blended. Then add your finely chopped ingredients. Salt and pepper and let sit for 15-20 mins just to let all the flavors meld. Serve and enjoy. You can also premake and serve chilled from the fridge.
